  1. My mom has a combo item called the Griddler. It's made by Cuisinart and it can be used for paninis, but it can also convert to a flat griddle. Works fantastic - she loves it.
  2. I've always just used my George Forman grill that I got at Target. It's so useful for so many different things--it not only makes great panini and grilled cheese sandwiches, but you can use it to grill meat, vegetables, and just about anything. The best part is that it's tilted downwards with a tray for catching any fat that drips down, so it goes into the tray and out of your food! Best of luck!
  3. I just use a cast iron griddle or fry pan and a brick covered with alluminum foil heated in the oven. It works great! Lodge also makes a huge cast iron meat weight that works ok but needs extra weight on top to smash the pannini down. I like and prefer the brick method Alton Brown uses because I don't have to spend a bunch of money on an appliance made to do one thing and one that is not cheap by any means.
