what can I use to make a panini?
other than a cast iron press or panini grill? can I use a wire rack? How would I do that?

- A panini, at least nowadays, is any grilled sandwich. You could grill like like a grilled cheese in a frying pan. If you're using a roll or loaf-type bun just cut a thin slice off the top of the bread so that it lays flat in the pan.

- A panini can be cooked in any frying pan or even on a cookie sheet in the oven. There are many ways to make them. I would not suggest a wire rack unless you put a try under it to catch any drips.
- use a frying pan put your sandwich in and put another pan on top of sandwich to weigh it down
- Get a heavy grill pan that has those large ridges on the bottom so that your food will get those grill marks (alternatively, if you have a stove-top grill, you can use that, too.) Next, get a good heavy cast iron skillet. Everyone should have a cast iron skillet anyways - they're indispensable in the kitchen. Anyways, when you want to make your sandwich, heat both the grill pan and cast iron skillet on the stove until both are very hot. Turn off the heat. Place your sandwich into the grill pan, then place the cast iron skillet on top, so that it's pressing down on the sandwich. Yes, you'll be using the bottom of the cast iron skillet to cook your sandwich. (what? you washed the bottom, right?) Shouldn't take more than a few minutes - watch the sandwich carefully so that you don't burn it. Well, it'll only have the grill marks on one side, but it should still be very tasty! Tips: be sure to use a little butter, oil or PAM on the bread before you put it into the grill pan to avoid sticking. DO NOT spray PAM on a hot pan! You could cause a fire - and that's not good eats. also, be sure to follow the manufacturer's directions for seasoning and cleaning your cast iron skillet - treated well, this thing should outlast your grandchildren.
- If you have a George Foreman grill, I would recommend it. It makes perfect panini. But you can also cook your panini in a regular pan, place a small piece of parchment paper on the exposed side, and sit a can on top of the sandwich for 2 minutes to achieve the kind of compression necessary for a good Panini.
