Set aside. (Note: this can be made one day ahead and refrigerated. Bring to room temperature before using.) Makes about 1 1⁄2 cups. In a small bowl, mix the butter and curry together. Spread 2 tbsp of the butter mixture on one side of each slice of bread. Place 4 slices of bread on your work surface, buttered side down. Spread the mustard on the bread. Place about 2 tbsp of the mango salsa on the bread followed by the cheese. (You may need to fold the cheese slices to fit the bread.) Place the remaining 4 bread slices on top, buttered side up. Add the remaining curry butter to a Teflon®‚ coated non-stick skillet and heat over medium heat for 2 minutes. Put the sandwiches in the skillet (in batches if necessary) and cover and cook for 2 to 3 minutes, or until the undersides are golden brown and the cheese has begun to melt. Uncover and turn the sandwiches with a spatula, pressing very firmly. Cook for 2 to 3 minutes, or until the bread is golden brown and the cheese has melted. Turn once more, press with a spatula, and cook for 30 seconds. Remove from pan and let cool for 3 to 5 minutes. Cut diagonally and serve with extra salsa on the side. Makes 4 sandwiches.
- my favorite is .. grilled cheese with bacon & tomatoe Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain. put buttered bread in the skillet. Top with a slice of cheese, 2 slices tomato, bacon, and another slice of cheese. Cover with a slice of bread grill sandwiches until golden on both sides.

- HAHAHAHAH! TOO FUNNY!!! I just tried something different with my grilled cheese, honest to God, I just finished it, and it was wonderful... Use a good quality butter, (and please, use butter, margarine is one molecule away from plastic and yes, so are alot of things) What I did, I buttered the two slices of bread, and then took an additional slice of bread, and buttered both sides, lightly, then in the skillet, put bread butter side down, I used a good quality Cheddar (white) and just one slice (from a quality deli) and then put in the middle bread, another slice of aforementioned cheese, and then the final slice of bread, grilled to GBD (Golden Brown Delicious), and enjoyed. The additional slice of bread in the middle created this moisture maker that cannot be explained, and it made it all ooye-goooy-e. Best of luck. Ohhh.. and tomato soup...

- Have fun with it--try varying both the cheese and the bread. For the cheese, smoked gouda is great. Also try havarti (preferably the real Danish havarti). It has a nice mildly nutty flavor. It's a fairly soft cheese to begin with, and so it melts beautifully with little effort (though it can get a little oily when melted, so you may want to cut back on the butter on the inside of the sandwich). Try flavored cheeses, like pepper jack, jalapeno havarti, herb havarti, etc. A fun one that I've tried before is using the shredded "Mexican" cheese mix (the one with spices mixed in). It's pretty cheap, has a good flavor, and works well with a little marinara sauce either on the bread or as a dip. Try mozzarella, which is great with fresh sliced plum (roma) tomatoes and a little basil (preferably a few fresh leaves, or a sparing amount of the dried). It's a classic combination of flavors that work well together. Oh! Almost forgot parmesan! You can use the good stuff (real slices of parmigiano reggiano), or try perking up a regular grilled cheese with some grated parmesan. As for the bread, try rye, pumpernickel, semolina (fantastically crusty), English muffin bread (in loaf form), Italian bread, whole wheat, multigrain (nicely nutty). Try different seasonings. Freshly ground black pepper, basil, oregano, paprika, etc. I was a huge fan of grilled cheese sandwiches as a kid (and I guess I still am). My first attempt at making them was when I was about six years old. I tried making one on the heat register grille of my house. My parents just shook their heads and let me try. - I hope your not counting calories I use extra Sharp cheddar cheese, don't worry if you don't like sharp cheese, when it's melted it's no longer sharp, but the flavor is wonderful. You can use any bread you want I prefer whole grain. Butter both sides of the bread put cheese, thinly sliced tomato and cooked bacon or pepperoni on and grill till done. or use whole grain bread, feta cheese, pitted kalamata olives and some fresh baby spinach, spray with olive oil Pam or brush with olive oil and grill. For a grilled cheese dessert: Use cinnamon raisin bread, and yes they make whole grain, mix cream cheese with a little sugar or sugar substitute, blend well, spread on bread and add some chocolate morsels like Nestles, use butter flavored Pam or butter, what the hey and grill.
- Just use different cheese or different bread. Try french bread and swiss cheese with good ham and put under an oven broiler for 5 minutes a side. Don't forget the spicy mustard.

- quick and easy say for 1 person. white bread buttered on both sides. friing pan buttered on light heat. i like swiss american white cheese! great flavor! maybe about 4 slices. fry on low heat on both sides til golden brown. allllll done!!takes maybe 3 minutes.
- The old fashion melted cheese and tomato is the best in my opinion. The most important thing in making a great grilled cheese is patience: keep the heat low to med so the bread does not burn and make sure you butter both slices. I like mozzerella but don't use it if your trying to impress someone you are eating with:STRINGY
- Make your simple regular grilled cheese but add such things like bacon, scrambled egg or egg any way you like it, ham, sausage, tomatoes, peppers, or just any tasty thing you might like with cheese. They're all good. I think I'll go make mine with green peppers and tomatoes right now.

- I'd say to use a frying pan. Put butter on one side of both breads and then place 2 cheeses in where the butter isn't. Put the sandwich on the frying pan....make sure that the butter is on the pan.
- You haven't lived until you try using other cheeses, besides the (all) American processed cheese.... Try using an organic white cheddar with a good tomato soup on the side; or with the white cheese use bacon and slice toms inside for a variation.. Oh, and try gouda...ymmmm A great bread for this particular recipe is a 7 grain bread like the Ezekiel you can find in the freezer at the health food store. ymmmmm smile...
