Do you have a great grilled cheese sandwich recipe?
I love grilled cheese sandwiches, and have tried various cheese, meats, seasonings, etc. What is your favourite grilled cheese sandwich recipe?

- Add dill pickles. My mom and sister are hooked on those!
- Sourdough bread. Prosciutto, one thin slice. Sharp cheese, almost anything that melts well, or for variety, a nutty cheese. Sliced tomato. Real butter. Does that count as a recipe?
- Find rosemary bread (as in bread with rosemary seasoning) for your grilled cheese. Grilled cheese on rosemary bread is heavenly. If you can't find rosemary bread, sprinkle some dried rosemary in the sandwich before you start cooking it. I like to use cheddar on that. Another type of grilled cheese is fresh mozzerella, pesto and sliced tomato on thick sliced bread. soooo good. I also like provolone, sliced turkey, sliced tomato and thousand island dressing, grilled on thick sliced bread.
- Add tomato slices. Little bit of salt and pepper on those. If you make a plain one on thin sliced pumpernickel bread that's another great variety. Completely different. One more- grilled cheese on texas toast, add the tomatoes or 2 sandwich sliced pickles. Yumm...
- Wow I thought I was the only one who put pickles on my grilled cheese!!! My brother-in-law used to make them with mayonnaise, cheddar, and Swiss. Basically he'd make a Swiss cheddar sandwich, then butter the outside of it and grill. The first time I saw him do it I thought he was nuts! Now I KNOW he's crazy... but he makes surprisingly good grilled cheese.
- for the full fat not good for you version: First of all you need to butter both sides of each piece of bread. Rye bread is good if you are using a Swiss or emmentaller cheese. ( Spicy brown mustard and some ham if you are getting away from the true grilled cheese) . White-( there can be only cheese on white bread)Cheese should be American, (Velveeta if you want the traditional runny ooey-gooey cheese) pepper jack is good, as is a combo of American and mozzarella. Now that we have bread and cheese taken care of, assemble and place on a griddle at med. heat. Grill on one side until a golden brown then turn and get the other side golden brown. Remove to a plate and here is another dilemma. do you wait a little while to cut so the cheese does not run all over the plate, or do you cut right away and get that runny cheese that you can wipe up with your finger after you finish the sandwich? By the way you have to cut corner to corner NOT straight across!
- TOTAL TIME: 30 MIN MAKES 4 SANDWICHES ingredients 3 chorizo sausages (6 ounces), thinly sliced on the diagonal 2 tablespoons unsalted butter, softened 8 slices of sourdough bread, cut from a pullman loaf 6 ounces Pepper Jack cheese, thinly sliced 2 tablespoons drained and sliced pickled jalapeƱos 6 ounces Havarti cheese, thinly sliced directions In a large skillet, cook the sliced chorizo over moderately high heat, stirring occasionally, until lightly browned, about 3 minutes. Drain the chorizo on paper towels and wipe out the skillet. Butter the bread on 1 side and turn 4 slices buttered side down on a work surface. Top with Pepper Jack, chorizo, pickled jalapeƱos and Havarti. Close the sandwiches with the remaining bread slices, turning the buttered side up. Preheat 2 large skillets. Add the sandwiches and cook over moderate heat, turning once, until the bread is golden and crisp, about 8 minutes. Cut the sandwiches in half and serve.
- I love the good "old fashioned" grilled cheese, on white bread, butter the outsides of the bread, cooked over medium heat in a fring pan, and a slice of American cheese.
