Hot Snack Ideas please?
I'm thinking of how best to cater for a large number of people (poss 100) on my own. I need to make hot snack. Should I take a microwave or sandwich toaster, make toasted sandwiches or paninis.... or what? It has to be tasty and simple.... anybody help please? Thank you very much.

- How about some meatballs out of a crockpot, keeps it warm and you can have more than one crockpot to satisfy all the guests.

- you should make battered mushrooms or califlower or just pick up a couple 6 foot party subs it would be much cheaper than making them your self
- A big bowl of Chilli Con Carni or a Hot-Pot something you can make in advance.
- If you are feeding a 100 people thats gonna take work no matter wot you do!! and money!! I wud go for jacket potatoes, cheap and easy..beans and coleslaw etc for fillings.
- Try a Rhode Island favorite: Dynamites: 5 pounds of ground beef 5 pounds of green peppers, diced 5 pounds of red peppers, diced 5 pounds of yellow onions, diced 5 garlic cloves, crushed 4 28-ounce cans of tomato sauce 2 bay leaves ½ cup of chopped fresh parsley hot pepper flakes, to taste salt and freshly ground black pepper, to taste Italian seasoning, to taste Saute veggies and beef to brown. Add tomato sauce and seasonings, simmer in crock for an hour. Serve hot on Torpedo/Sub rolls. (Add tomato paste to thicken if necessary.)
- Take crescent rolls and stuff with deli meat and cheese....and reheat on crusting tray in microwave ....I personally would do mini turkey meatballs with crusted garlic bread and different dipping sauce or spreads or cover with grated parm cheese....Gosh I am hungry now.
- How about artichoke dip w/ parmesan? It is yummy and if you have those little iron skillets you can warm several at a time to serve with baguettes or crackers. Meatballs in Honey Garlic sauce (Safeway brand is AWESOME) Weiners in grape sauce is awesome too, real simple and everyone loves them! You can also Check out Rachael Rays website at www.Rachaelray.com and she has tons of great recipes for entertaining. Another site is Allrecipes.com where I believe you can adjust the serving sizes and it increases the recipe to the number you want to make meals for. Good licks!
- wow. personally I think panini's/hot sandwiches could be quite tricky unless you have a lot of sandwich machines and people to operate them (so that people can eat at the same time). Soup would be a good option I think: easy to prepare, you could make two options (one veggie, perhaps carrot and coriander and one meat such as chicken). You can serve it in cups ( no cutlery necessary!) and its warming and filling. Have chunks of french bread in a basket for people to help themselves. Cheap, cheerful and easy to serve and control if you are doing this alone. If you don't think the soup idea would work the other option I would go for is pizza. This is only going to work if you have an oven handy though. You could either buy a load of frozen ones or buy the bases (from tesco) and make your own with a variety of toppings. Heat up on site and slice, serve on a napkin to keep things simple. If you have an oven; and want to do something a bit more 'substantial' I would suggest jacket potatoes. Cheap, easy and VERY filling! You will need plates and forks however for this. You could also provide grated cheese, beans and tuna/sweetcorn mix in large bowls to allow people to add fillings themselves. All you need to do is top up the flow of potatoes out of the oven onto peoples plates. Is there a reason the snack has to be hot? If you are having to do this alone; and are really having 100 people it would be easier for you to do cold sanwiches that you can pre-make, cold pizza slices and other finger food such as sausage rolls and quiches. Final word... I'd go with the soup option. Home made if poss! :) Bonne chance!
- I did a catering a few weeks ago and it was all hot snacks. here are some items I created for it. tenderloin on toast points with a horseradish sauce. this is very simple you just cook the tenderloin, slice it really thin, place it on toast points, then top it with a dab of the horseradish sauce, and put a little sprig of parsley for garnish, its simple the only thing that has to be cooked is the meat and you could do that at your house and schlep it to the location. then the bacon wrapped scallops, it think you know how to do those but they are vary simple and everyone loves them. or you could do sesame chicken, i cant find my recipe or i would give it to you. its just bite size pieces of chicken with sesame seeds, i used both black and white seeds, broil them in your little toaster oven, put tooth picks i them and plate them. I made two sauces, a peanut sauce, and a citrus ginger sauce. thay went over very well. thats all i can think of for now but i hape this helps you out sorry i dont have the recipies with me. oh, bring the sanwhich toaster. good luck, i would suggest having atleast one person help you with this function, you will get stressed out really quick if you put all of the pressure on yourself to do everything. have fun!

- I made suasage rolls yesterday and it couldn't be simpler! I was only cooking for three but made enough for at least 10 in only 30 minutes! Basically it's just mixing the insides of sausages with ingrdients like onions, parsley (I even gave it a twist with chopped up sun dried tomatoes). Then you roll out a puff pastry paket and cut in half lengthways. Put the sausage mix down the middle, fold the pastry over and brish with a beaten egg. 30 mins in the oven and hey presto!
- nice hot snack would be some creamy soup and fresh bread! yum! premake some soup and next day just put it in a crock pot to heat it back up. sounds good to me right now...ummm....brocolli cheese soup! I did have this really awesome tortilla soup one time, kind of Mexican type soup, really yummy!
