Best Panini Grill

Any ideas on what I can cook with this?

So, here's the deal, we have this cuisinart griddler, it's kind of just sitting in our kitchen, and I'd like to use it, what can I make with it? I'm vegetarian btw http://www.amazon.com/Cuisinart-GR-4-Griddler/dp/B0001XASWQ

2. That would be great to fix a pannini sandwich. Just build the sandwich of your choice ( I like portobello mushroom) add cheese if you want and put it on the griddle. You could also make potato pancakes (latkes), regular pancakes and grilled cheese. You could also grill squash, zucchini and other sliced root vegetables for a veggie taco
