- Grill assorted vegetables, such as, zucchini, eggplant, onions, peppers, tomatoes, herbs, salt & pepper, & olive oil, and a splash of acid (i.e., citrus or your favorite vinegar - balsamic works well for me) If you eat dairy products, add in goat cheese or pepper jack. Make pannini, and eat. Yum.

- Grilled Vegetarian Panini with Mozzarella and Basil Ingredients: French bread mozzarella cheese sliced tomato fresh basil, minced olive oil Preparation: Pre-heat your grill, panini press or skillet to medium. Slice your French bread on a bias cut. This panini sandwich would also taste great on sourdough bread. Slice your mozzarella cheese about 1/4 inch thick, and cut the tomato into thin slices. Assemble your panini by placing the mozzarella cheese on top of the bread, then add a single layer of tomatoes. Add about 1/2 tsp chopped fresh basil on each sandwich, and add the top layer of bread. Lightly brush each side of your sandwich with olive oil and place on your grill or panini press. Cook on each side for 3-4 minutes, or until cheese is melted. Grilled Portabella Mozzarella Vegetarian Ingredients: 4 sesame seed buns 2 large golf-ball sizes balls fresh mozzarella cheese 2 portabella mushrooms, sliced in half horizontally 1 large red bell pepper, sliced into 4 long pieces 2 tbsp balsamic vinegar 2 tsp olive oil 2 tbsp dried basil 1 tbsp chopped fresh chives alfalfa sprouts, onions or your favorite vegetable (optional) Preparation: Combine cheese, oil, basil, chives and vinegar in a blender. Blend until smooth; set aside. Grill or broil the mushrooms about 3 minutes per side or until tender. Grill peppers (do not peel) until tender, about 5 minutes per side. Skin will be wrinkled and lightly brown. Slightly toast the buns on the grill and spread the mozzarella mixture evenly on the bottom of each bun. Cover with mushroom slice and red pepper. Serve immediately. Spinach, Mozzarella and Roasted Red Pepper Panini Recipe Ingredients Fresh or cooked Spinach Grated or sliced mozzarella Roasted red pepper strips sliced black olives Sprinkle of oregano, garlic powder and parsley Salt and Pepper Two slices of crusty bread Extra Virgin Olive Oil Directions Arrange ingredients between slices of bread, brush with Olive oil, then grill until golden brown and melted.
