Panini Maker Ideas??

I won a panini maker at my offices christmas party and I have NO idea what to do with it. My 2 year old HATES sandwiches and won't eat PB &J, grilled cheese or ham and cheese--which is the extent of my hot sandwich knowledge (that and blt's and balt's). Anyone have any ideas on any other sandwichs to make with it? I want to get some use out of it for the rest of the family but for my limited sandwich knowledge my griddle works just as well....

Pour remaining ingredients except bread, cheese, and avocado into bag. Seal bag and squish to mix marinade and coat steak. Refrigerate steak for 1-24 hours. When ready to eat, prepare and preheat grill. Place flank steak on grill and cook over medium coals for 4-5 minutes per side, turning once, until desired doneness. Set steak aside, covered with foil, for 6 minutes. While steak is resting, place cheese on half of bread slices and place on grill, cheese side up, until cheese melts. Slice flank steak thinly across grain and make sandwiches with cheesy bread and sliced avocado. Chicken Panini Pizza dough is baked, then grilled with a savory spinach and chicken filling in this delicious hot sandwich recipe. 10 oz. can refrigerated pizza crust dough 9 oz. pkg. frozen spinach, thawed and well drained 1/3 cup mayonnaise 1/4 tsp. garlic salt 1 Tbsp. olive oil 1 cup chopped red onion 1 Tbsp. sugar 1 Tbsp. apple cider vinegar 2 boneless, skinless chicken breasts 1/2 tsp. dried thyme leaves 1/2 tsp. salt 4 slices Havarti cheese Preheat oven to 375 degrees. Unroll pizza dough and place in an ungreased 15x10x1-inch jelly roll pan. Press down on dough until it reaches edges of pan. Bake at 375 degrees F for 10 minutes until light brown and set. Cool completely. In small bowl, combine well drained spinach, mayonnaise and garlic salt, mix well, and refrigerate. In small saucepan, heat oil over medium heat. Add onion and cook and stir for 2 to 3 minutes until crisp tender. Add sugar and vinegar, then reduce heat to low. Simmer this mixture for 3 to 5 minutes or until most of liquid is absorbed, stirring often. Flatten each chicken breast half by placing between two pieces of waxed paper. Gently pound chicken with a rolling pin or meat mallet until about 1/4 inch thick. Remove paper and sprinkle chicken with thyme and salt. Spray large skillet with nonstick cooking spray. Heat over medium high heat, then add chicken. Cook chicken for 8 minutes, turning once, or until chicken is browned and thoroughly cooked and juices run clear. Cut cooled pizza crust into 4 rectangles. Remove rectangles from pan and spread each with 2 tablespoons mayonnaise mixture. Top 2 rectangles with chicken, onion mixture, cheese and remaining crust rectangles to make sandwiches. Heat large nonstick skillet over medium-high heat. Place sandwiches in skillet. Place smaller skillet on top of sandwiches to flatten them as they cook. Cook 4 to 6 minutes or until crisp, thoroughly heated and browned, turning once halfway through cooking time. Cut each sandwich in half to serve. 4 servings Chicken Florentine Panini This is THE MILLION DOLLAR Recipe entered and won by Denise JoAnne Yennie of Nashville, Tennessee in the 40th Pillsbury Bake-Off® Contest held in Orlando, Florida on February 27, 2002. 1 (10-oz.) can Pillsbury® Refrigerated Pizza Crust 1 (9-oz.) pkg. 5. Check the manual and see if the highest temperature it reaches is hot enough to safely cook meat. If so you could possibly grill chicken breasts, burgers or steaks on it. You could also make quesadillas, grill veggies or, just sell it on ebay or craigslist!
  6. My husband and I make this all the time: Make a panini sandwich with pesto, roast beef, roasted red peppers, provolone cheese and butter the bread on the outside. Grill in the panini until cheese is melted and bread is nicely toasted. You could also substitue the roast beef for cooked chicken breast, turkey, etc.
